Standard for Commercial Electric Cooking Appliances

UL 197:2020 is a standard that covers the safety requirements for commercial electric cooking appliances. These appliances are rated 600 volts or less and are intended for indoor use, specifically in commercial kitchens, restaurants, or other establishments where food is dispensed. The standard applies to a wide range of appliances such as coffee makers, conductive cookers, food warmers, fryers, griddles, steam kettles, steam cookers, nut warmers, popcorn machines, ranges, and utensil warmers.
However, the standard does not cover vending machines, cooking appliances intended for household use, commercial cooking appliances rated higher than 600 volts, or microwave cooking appliances. Appliances designed for mounting at an outlet box, such as food warmers, are evaluated based on compliance with this standard as well as the mounting and weight requirements for electric lighting fixtures.
Furthermore, appliances that utilize heat sources other than electricity, such as gelled or liquid fuel, coal, gas, or oil, are also assessed for additional fire risks. Appliances that use gelled or liquid fuel are investigated while operating with the specific fuel they are intended to use.
The standard also addresses the installation requirements for commercial cooking equipment with integral systems for limiting the emission of grease-laden air. These systems must comply with the Standard for Ventilation Control and Fire Protection of Commercial Cooking Operations, NFPA 96, and ensure that the effluent emitted from the system does not exceed 5 mg/m³ as measured by the U.S. Environmental Protection Agency (EPA) Test Method 202.
Lastly, commercial cooking equipment employing integral recirculating systems must comply with the requirements of this standard and the requirements specified in UL 710B, the standard for Recirculating Systems.
